The Role of Trainee Chefs
Your role is essentially twofold:-
- To play a key role in the development and delivery of consistently high quality culinary experiences for our guests at any and all of our venues whether exclusive use or hotels; and
- To play a contributory role to the broader guest experience.
Culinary Experience
Wildland is growing and our guest offer is expanding with new venues and experiences planned over the next few years. An essential ingredient is, of course, our food and beverage. We are adding to our talented team of chefs who create simple and tasty dishes in a family style setting. You will consistently deliver the highest quality guest and culinary experience, prioritising and promoting the use of sustainable produce and suppliers, whilst engaging and serving our guests. We have a range of venues from boutique hotels to exclusive use, beautifully renovated buildings which are part of our heritage, located in the some of the most stunning landscapes in Scotland. You will be a creative, committed, and dedicated individual blending your growing knowledge of our conservation and regeneration story into our guest experience, so that every meal and snack informs and delights every time.
As Trainee Chefs, you will be expected to be a team player who is able to showcase the story of our produce, through supporting the Head Chef in the creation of the meals and inspiring our guests to develop their own cooking skills and eating choices.
Trainee Chefs Role

- Becoming integral to a collaborative and high performing Chef Team so that you jointly explore, design, and co create to ensure that we consistently identify opportunities to improve the team and the guest experience.
- Align to and ensure compliance with all Health, Safety, Security and Environmental Health requirements.
- Support the Head Chef in all aspects of the provision of an outstanding culinary experience.
The Chef Team
We are entering a new phase where we are designing new approaches to developing our team and experiences which will include inspiring others to share our vision and our stories, alongside inspiring people to join our team. Our current Team are dedicated individuals who share a passion for consistent high quality.
Our Head Chefs are located at each of our venues.
Trainees
We are seeking enthusiastic individuals who are at the early stage of their careers and are seeking to join a Team of world class chefs, operating in a conservation environment, with high aspirations and creativity. If you are passionate about the Wildland Vision we will invest in your training.
Life in Balance
The nature of our venues is that we need our Chefs to be fully present when engaging with our guests. This means that we recognise the demands of the role and intend to design work rotas which facilitate a consistent high-quality experience for our guest AND provide you with quality downtime so that you can ensure you take care of your ‘whole wellbeing’. We will provide you with a good standard of accommodation if required and a suite of benefits which, again, promotes health and wellbeing. Our Locations
Our Exclusive Use Venues are Aldourie Castle, Kinloch Lodge and Glenfeshie Lodge, and our Guest Houses are Lundies and Killiehuntly Farmhouse.We expect our Team to be flexible and support each other, so, though you may be appointed to one venue, you must be willing to travel to other locations to help your colleagues.
Kinloch Lodge and Lundies House are located near the village of Tongue, about 2 hours drive north of Inverness, which has a population of approximately 500 people. This is a small rural community, and you will need to enjoy being in a remote environment which has much to offer for the outdoor enthusiast. Wildland is working in partnership with the local community to sympathetically add to the community activities and resources. Tongue enjoys hotels, bars, a primary school, community hall, bakery, holiday accommodation as well as many visitor attractions. Tongue is on the North Coast 500 route. It is a great base for walking, hiking, mountaineering, cycling, wild water swimming, surfing, and silence!
Aldourie Castle is located 20 minutes drive south of Inverness and on the shore of the famous Loch Ness – with its own monster! Obviously, being closer to a city means that there is considerably greater social infrastructure and many things to do; and is the gateway to the Highlands – in all directions.
Both locations are places to experience the rhythms of nature and find a deep connection with a raw and unspoilt landscape.
Glenfeshie Lodge and Killiehuntly are in the Heart of the Cairngorms, less than 30 minutes from Aviemore, a vibrant skiing and outdoor activity area.

Essential Skills
- Evidence of undergoing a Cheffing apprenticeship, either School or College based.
- Demonstrable competency to learn delivery of all aspect of HSE in the kitchen, and wider operations.
- Passion and knowledge for using sustainable produce..
Requirements
Due to the locations, possession of valid driving license or access to personal transport is essential.
You must be a self -starter and self-motivated and a bit of an adventurer and explorer to mine the benefits of living in our locations. We are open to discussing how we can balance personal lifestyle preferences with work requirements – for example building in sufficient breaks to return to a different downtime base – rather than living full time in the remote location.
